Ingredients

INGREDIENTS

  • 8 slices day-old bread, cubed
  • 2 cups fresh spinach, chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup milk
  • 6 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
  3. Grease a 9x13 inch baking dish with cooking spray or butter.
  4. Layer half of the bread cubes in the bottom of the prepared baking dish.
  5. Spread the chopped spinach evenly over the bread layer, followed by half of the shredded cheddar cheese.
  6. Top with the remaining bread cubes, then pour the egg mixture over the top, ensuring all bread is soaked.
  7. Sprinkle the remaining cheddar cheese and chopped parsley on top.
  8. Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until golden brown and puffed.
  9. Allow to cool for a few minutes before slicing and serving.

Notes

Tip: Use any leftover bread you have on hand, such as sourdough or whole grain, to add a different flavor profile.

For the best flavor, feel free to experiment with different cheeses like feta or gouda. If you want to make it ahead of time, assemble the strata the night before and refrigerate it overnight, allowing the bread to soak up the egg mixture.

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat individual portions in the microwave or oven until warmed through. It also freezes well—just thaw and reheat for a quick breakfast option!

Ingredients

INGREDIENTS

  • 1 cup cooked quinoa
  • 1 ripe banana, mashed
  • 1 cup whole wheat flour
  • 1 cup milk (or non-dairy alternative)
  • 1 large egg
  • 2 tbsp honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • Butter or oil for cooking

Instructions

  1. In a large bowl, combine the cooked quinoa, mashed banana, flour, milk, egg, honey, baking powder, baking soda, cinnamon, and salt. Stir until just combined.
  2. Preheat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  3. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  4. Flip pancakes and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter.
  5. Serve warm, stacked high and topped with your favorite syrup and fresh fruit.

Notes

Tip: For added flavor, mix in chopped nuts or chocolate chips into the batter if desired.

To ensure your quinoa pancakes are light and fluffy, avoid overmixing the batter. A few lumps are perfectly fine! If you find the batter too thick, add a splash of milk to adjust the consistency.

You can easily substitute the quinoa with oats for a gluten-free option. Leftover pancakes can be stored in the fridge for up to 3 days or frozen for up to a month. Just reheat in the toaster or microwave when you’re ready to enjoy them!

  • 1 lemon, juiced and zested
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth

  2. Toss the chopped beets with olive oil, salt, and pepper on a baking sheet.
  3. Roast the beets in the preheated oven for about 30-35 minutes or until tender, stirring halfway through.
  4. In a large pot, sauté the chopped onion and minced garlic until softened, about 5 minutes.
  5. Add the roasted beets to the pot along with the vegetable broth, orange juice and zest, and lemon juice and zest.
