Instructions

  1. Peel and thinly slice the lotus root to about 1/8-inch thickness using a mandoline. Rinse slices under cold water, then pat completely dry with paper towels.
  2. Heat oil in a heavy-bottomed pot or wok over medium-high heat until it reaches 350°F. Test by frying one slice: it should bubble and crisp in about 20 seconds.

  • 1 cup (140g) macadamia nuts, coarsely chopped
  • 2 tablespoons shredded coconut
  • 1 tablespoon unsalted butter
  • 1 tablespoon brown sugar
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C). Do not grease a 9-inch (23cm) chiffon tube pan.
  2. In a large bowl, whisk together cake flour, 1/2 cup sugar, and a pinch of salt.
  3. In a separate bowl, whisk egg yolks, coconut milk, vegetable oil, lime juice, and lime zest until smooth.

FOR THE AREPA CUPS

  • 1½ cups masarepa (pre-cooked corn flour)
  • 1 cup milk

Instructions
