Ingredients

INGREDIENTS

  • 1 sheet puff pastry, thawed
  • 2 cups fresh spinach, packed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the fresh spinach, feta cheese, toasted pine nuts, olive oil, minced garlic, salt, and pepper. Blend until smooth and well combined.
  3. Roll out the thawed puff pastry on a lightly floured surface into a rectangle about 1/8 inch thick.
  4. Spread the spinach-feta pesto evenly over the puff pastry, leaving a small border around the edges.
  5. Starting from one long side, roll the pastry tightly toward the center. Repeat with the other side until both rolls meet in the middle.
  6. Slice the rolled pastry into 1/2-inch thick pieces and place them cut side up on the prepared baking sheet.
  7. Brush the tops with the beaten egg to give them a golden color when baked.
  8. Bake in the preheated oven for 20-25 minutes, or until the palmiers are puffed and golden brown. Allow to cool slightly before serving.

Notes

Tip: For extra crunch, sprinkle some sesame seeds on top before baking.

For a richer flavor, consider adding a pinch of garlic powder or a squeeze of lemon juice to the spinach-feta pesto. If you’re looking for a nut-free version, you can replace pine nuts with sunflower seeds or simply omit them.

These palmiers are best enjoyed fresh out of the oven, but you can store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 5-7 minutes to restore their crispness.
