- 1 ripe avocado, mashed
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1/2 cup shredded cheese (optional)

Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the drained chickpeas with olive oil, smoked paprika, cayenne pepper, and salt. Toss until evenly coated.
- Spread the chickpeas onto a baking sheet in a single layer and roast for 20-25 minutes, or until crispy and golden, stirring halfway through.
- While the chickpeas are roasting, prepare the avocado mixture by mashing the avocado in a bowl and mixing in diced tomatoes, red onion, cilantro, lime juice, and salt to taste.
- Once the chickpeas are done, remove them from the oven and allow to cool slightly.
- To assemble, place some tortilla chips on a serving platter, top with the avocado mixture, and sprinkle with roasted chickpeas and shredded cheese if using. Serve immediately.
Notes
Tip: For a creamier texture, add a dollop of sour cream or your favorite yogurt on top before serving.
To make these nacho bites even spicier, consider adding a pinch of cayenne pepper to the chickpeas before roasting. If you’re looking for a vegan option, feel free to substitute the cheese with a vegan alternative or skip it entirely.
For storage, keep the roasted chickpeas in an airtight container at room temperature and assemble the nacho bites just before serving to maintain their crispiness. They are best enjoyed fresh!
