  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 cup pomegranate juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 cup couscous
  • 2 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, salt, pepper, and parsley. Mix until well combined.
  3. Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for 20 minutes or until cooked through and golden brown.
  5. While the meatballs are baking, prepare the pomegranate glaze. In a small saucepan, combine pomegranate juice, honey, and soy sauce. Bring to a simmer over medium heat and reduce for about 5-7 minutes until thickened.
  6. In a separate pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in couscous and toast for another minute.
  7. Pour in vegetable broth, bring to a boil, then cover and remove from heat. Let it sit for 5 minutes before fluffing with a fork.
