Ingredients
INGREDIENTS
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 4 cups pumpkin puree (fresh or canned)
- 3 cups vegetable broth
- 1 cup cream (or coconut milk for dairy-free)
- 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
- Salt and pepper to taste
- 1/2 cup pepitas, toasted
- Fresh sage leaves for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, coriander, and cinnamon; sauté for an additional minute until fragrant.
- Add the pumpkin puree and vegetable broth to the pot. Stir well to combine and bring to a simmer.
- Once simmering, reduce heat and add the cream and sage. Season with salt and pepper to taste. Allow to cook for 10-15 minutes, stirring occasionally.
- Using an immersion blender, blend the bisque until smooth and creamy. Alternatively, carefully transfer to a blender in batches.
- Serve hot, topped with toasted pepitas and fresh sage leaves, if desired.
Notes
Tip: For a spicier version, add a pinch of red pepper flakes or a dash of cayenne pepper when you add the spices.
For an extra depth of flavor, consider adding a splash of apple cider or a hint of maple syrup to balance the spices. If you’re short on time, canned pumpkin puree can be used instead of fresh pumpkin. When serving, drizzle a bit of heavy cream or coconut milk on top for a beautiful presentation.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat, stirring occasionally. This bisque also freezes well; just be sure to leave out the pepitas until you’re ready to serve.
