Ingredients

INGREDIENTS

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon chai spice blend (or 1/2 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp cardamom)
  • 1 cup chocolate chips

FOR THE DRIZZLE

  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in both sugars until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, salt, and chai spice blend.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  6. Fold in the chocolate chips, then pour the batter into the prepared baking pan and spread evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. While the brownies are baking, prepare the chocolate drizzle by melting the chocolate chips and heavy cream together in a small saucepan over low heat, stirring until smooth.
  9. Once the brownies are done, remove them from the oven and let them cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Drizzle the chocolate mixture over the cooled brownies, then cut into squares and serve.

Notes

Tip: For a deeper flavor, let the brownies sit for a day before serving to allow the flavors to meld.

To get the perfect fudgy texture, be careful not to overbake the brownies; they should still be slightly gooey in the center. You can also substitute the chocolate drizzle with white chocolate for a different flavor twist.

For storage, keep the brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. They also freeze well; just be sure to wrap them tightly in plastic wrap and place them in a freezer-safe bag.

Ingredients

INGREDIENTS

  • 4 cups mixed greens
  • 2 medium apples, cored and sliced (preferably tart varieties like Granny Smith)
  • 1 cup fresh cranberries (or dried cranberries)
  • 1/2 cup pecans, toasted
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. In a small skillet, toast the pecans over medium heat until fragrant, about 5 minutes. Stir frequently to prevent burning. Remove and let cool.
  2. In a large bowl, combine the mixed greens, sliced apples, cranberries, and toasted pecans.
  3. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, cinnamon, nutmeg, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
  5. If using, sprinkle the crumbled feta cheese on top before serving.

Notes

Tip: For extra crunch and flavor, add a sprinkle of pomegranate seeds or a handful of sunflower seeds to the salad before serving.

To ensure your pecans stay crunchy, toast them just before serving. This enhances their flavor and adds a lovely crunch to the salad. If you’re short on time, you can use pre-toasted pecans, but be sure to check for freshness.

Feel free to customize this salad by adding your favorite ingredients, such as feta cheese or quinoa for added protein. Leftovers can be stored in an airtight container in the refrigerator, but it’s best enjoyed fresh to maintain the crispy texture of the apples.

Ingredients

INGREDIENTS

  • 1 lb beef tenderloin
  • 2 cups butternut squash, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 cup red wine
  • 1 cup beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add diced butternut squash, season with salt and pepper, and cook until tender, about 10 minutes. Set aside to cool.
  3. Season the beef tenderloin with salt, pepper, thyme, and rosemary. Sear in the same skillet over high heat for about 2-3 minutes on each side until browned. Remove from heat and let rest.
  4. Roll out the puff pastry on a floured surface to a rectangle large enough to wrap the beef. Spread the cooled butternut squash evenly over the pastry.
  5. Place the seared beef on top of the butternut squash, then wrap the pastry around the beef, sealing the edges. Brush the top with the beaten egg.
  6. Place the wrapped Wellington on a baking sheet and bake for 25-30 minutes or until the pastry is golden brown. Let rest for 10 minutes before slicing.
  7. In a saucepan, combine red wine, beef broth, and minced garlic. Bring to a boil, then reduce to a simmer until thickened, about 15 minutes. Stir in butter to finish the sauce.
  8. Slice the Wellington and serve with the red wine reduction drizzled on top.

Notes

Tip: Ensure the butternut squash is completely cooled before wrapping in pastry to avoid sogginess.

For best results, make sure your beef is at room temperature before searing to ensure even cooking. When assembling the Wellington, ensure the butternut squash is completely cooled to prevent soggy pastry. You can substitute the beef with a mushroom mixture for a vegetarian option.

Store leftovers wrapped tightly in plastic wrap, and reheat in a preheated oven to maintain the pastry’s crispiness. Serve this dish with a side of seasonal vegetables for a complete meal.

Lemon-Garlic Shrimp Risotto with Saffron and Spinach

by Linda August 18, 2026
written by Linda

This Lemon-Garlic Shrimp Risotto is a luxurious dish that perfectly balances the richness of creamy arborio rice with the brightness of lemon and the depth of saffron. Each bite is a delightful combination of tender shrimp and vibrant spinach, creating an inviting and elegant meal that’s perfect for any occasion.

The key to achieving that creamy consistency lies in the slow cooking of the rice while gradually adding broth, allowing each grain to absorb the flavors. The touch of saffron elevates this dish, lending a subtle floral note that pairs beautifully with the garlic and lemon.

Ingredients

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup arborio rice
  • 4 cups vegetable or chicken broth, heated
  • 1/2 cup dry white wine
  • 1/2 teaspoon saffron threads
  • 1 pound shrimp, peeled and deveined
  • 1 lemon, zested and juiced
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in the arborio rice, cooking for 1-2 minutes until slightly translucent.
  3. Pour in the white wine, stirring until fully absorbed by the rice.
  4. Add saffron threads to the heated broth and gradually pour in, one ladle at a time, stirring frequently until absorbed before adding more.
  5. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  6. In the last five minutes of cooking, add the shrimp, lemon juice, and zest, cooking until shrimp are opaque.
  7. Stir in chopped spinach and Parmesan cheese, mixing well. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

Tip: For extra creaminess, you can add a splash of heavy cream or more Parmesan cheese at the end of cooking.

When making risotto, be patient! Stirring frequently and adding broth gradually ensures that the rice cooks evenly and develops its creamy texture. If you want to make this dish vegetarian, simply omit the shrimp and add more vegetables, like peas or mushrooms.

To store leftovers, keep them in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of broth or water to restore the creamy texture.

Ingredients

INGREDIENTS

  • 2 large sweet potatoes, peeled and cubed
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 package of empanada dough (or homemade if preferred)
  • 1 egg, beaten (for egg wash)
  • For Spicy Aioli: 1/2 cup mayonnaise, 1 tablespoon sriracha, 1 clove garlic minced, juice of 1/2 lemon, pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and mash until smooth.
  3. In a skillet, heat olive oil over medium heat. Add the sliced onions and salt, cooking until they are caramelized, about 15-20 minutes, stirring occasionally.
  4. Once the onions are caramelized, stir them into the mashed sweet potatoes. Add black pepper, smoked paprika, and cayenne pepper. Mix until well combined.
  5. On a clean surface, lay out the empanada dough circles. Place a generous spoonful of the sweet potato mixture in the center of each circle.
  6. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  7. Brush the tops of the empanadas with the beaten egg for a golden finish.
  8. Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  9. While the empanadas bake, prepare the spicy aioli by mixing all aioli ingredients in a bowl until smooth.
  10. Serve the hot empanadas with the spicy aioli on the side. Enjoy!

Notes

Tip: For an extra crispy texture, consider frying the empanadas instead of baking them.

For the best results, make sure to let your caramelized onions cook low and slow until they are golden brown and sweet. If you’re short on time, you can use store-bought empanada dough, which will save you some prep time.

Feel free to customize the filling by adding ingredients like black beans or cheese for extra flavor. If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in an oven to retain their crispiness.

Ingredients

INGREDIENTS

  • 2 ripe avocados, mashed
  • 1 cup sweet corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup chopped fresh cilantro

  • Oil for frying

FOR THE SPICY LIME DIP

  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon chili powder
  • Salt to taste

Instructions

  1. In a large bowl, combine mashed avocados, corn, flour, cornmeal, cilantro, green onions, eggs, baking powder, salt, pepper, and cumin. Mix until well combined.
  2. Heat oil in a skillet over medium heat. Once hot, drop spoonfuls of the fritter mixture into the skillet, flattening gently.

These fritters can be stored in the refrigerator for up to 3 days. Reheat them in the oven for a few minutes at 350°F to regain their crispiness. Enjoy them as an appetizer, snack, or even as a light main dish!

  1. In a mixing bowl, combine coconut milk, chia seeds, maple syrup, vanilla extract, and a pinch of sea salt. Stir well to combine.
  2. Cover and refrigerate the mixture for at least 2 hours or overnight until it thickens into a pudding-like consistency.
  3. Once thickened, stir the chia pudding again to break up any clumps.
  4. In serving glasses or bowls, layer the chia pudding with diced mango, sliced kiwi, and diced pineapple. Repeat the layers until the glasses are full.
  5. Top with a sprinkle of fresh mint leaves for garnish before serving.

Notes

Storage: The chia pudding can be made ahead and stored in the refrigerator for up to 5 days. Just keep the fruits separate until ready to serve to maintain their freshness.

For a smoother texture, blend the coconut milk with the chia seeds before letting them sit to thicken. If you don’t have coconut milk, almond milk works well too but may alter the flavor slightly.

Feel free to substitute the fruits based on what’s in season or your personal preferences. Berries, bananas, or papaya would also make great additions. This parfait can be prepared a day in advance and stored in the fridge for a quick grab-and-go meal!
