Ingredients

INGREDIENTS

  • 1 cup shelled edamame (cooked)
  • 2 ripe avocados
  • 2 tablespoons lime juice
  • 1-2 tablespoons sriracha (adjust to taste)
  • 1 clove garlic, minced
  • Salt to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a mixing bowl, mash the ripe avocados until smooth.
  2. Add the cooked edamame, lime juice, sriracha, and minced garlic to the bowl.
  3. Stir to combine all ingredients until well blended, leaving some edamame whole for texture.
  4. Season with salt to taste and mix again.
  5. Transfer the guacamole to a serving bowl and garnish with fresh cilantro if desired.

Notes

Tip: To keep leftover guacamole fresh, press a piece of plastic wrap directly onto the surface before sealing it in an airtight container.

For the best flavor, make sure to use ripe avocados. If you want a milder dip, adjust the sriracha to your taste or substitute it with a milder hot sauce. Leftover guacamole can be stored in an airtight container; to prevent browning, press plastic wrap directly onto the surface before sealing.

Feel free to experiment with additional ingredients like diced tomatoes, cilantro, or even a splash of soy sauce for an Asian twist!

Ingredients

INGREDIENTS

  • 1 cup pineapple juice
  • 1 cup orange juice
  • 1 cup coconut water
  • 2 cups sparkling water
  • 1 cup diced fresh fruit (such as strawberries, kiwi, and mango)
  • Ice cubes
  • Mint leaves for garnish (optional)

Instructions

  1. Combine pineapple juice, orange juice, and coconut water in a large pitcher.
  2. Add sparkling water to the pitcher and stir gently to combine.
  3. Fill glasses with ice cubes and pour the juice mixture over the ice.

Notes

Tip: For an extra tropical twist, try adding a splash of grenadine for a sunset effect!

To make this drink even more appealing, consider freezing some of the fruit pieces to use as ice cubes. This way, the drink remains chilled without diluting the flavor. You can also experiment with different fruit juices, such as mango or passionfruit, to customize the flavor to your liking.

For a non-alcoholic option, this drink is delightful on its own, but if you want to add a twist, consider splashing in a bit of rum or vodka for a tropical cocktail version. Store any leftovers in the refrigerator, although it’s best enjoyed fresh.

Ingredients

INGREDIENTS

  • 2 large cucumbers, peeled and diced
  • 1/2 cup fresh mint leaves
  • 1/4 cup lime juice
  • 4 cups water
  • 1-2 tablespoons honey or agave syrup (optional)
  • Ice for serving

Instructions

  1. In a blender, combine the diced cucumbers, fresh mint leaves, lime juice, and water.
  2. Blend until smooth, about 1-2 minutes.
  3. Strain the mixture through a fine mesh sieve into a pitcher to remove any pulp, pressing gently to extract all the liquid.
  4. Taste the cooler and add honey or agave syrup if desired, stirring to combine.
  5. Serve the cooler over ice, garnished with extra mint leaves. Enjoy cold!

Notes

Tip: Use fresh mint for the best flavor and consider blending a few mint leaves into the drink for added texture.

For a sweeter version, you can add a bit of honey or agave syrup to taste. If you prefer a sparkling touch, replace still water with sparkling water for an extra fizz. This drink can be made ahead of time; simply keep it chilled in the refrigerator. Serve it in clear glasses to showcase the beautiful green hues and enjoy garnished with additional mint leaves for a lovely presentation.

Common mistakes include using stale mint, which can lose its flavor. Always opt for fresh mint leaves for the best taste. If you have leftover cooler, store it in a sealed container in the fridge for up to two days, though it’s best enjoyed fresh!

Ingredients

INGREDIENTS

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1/4 cup heavy cream
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 1 teaspoon almond extract
  • 1 cup fresh raspberries
  • 1 tablespoon raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine flour, powdered sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  3. Add the egg yolk and pulse until the dough comes together. Press the dough into the bottom and up the sides of tartlet pans.
  4. Prick the bottoms with a fork and chill for 15 minutes.
  5. Bake the crusts for 20-25 minutes or until lightly golden. Allow them to cool completely.
  6. In a bowl, whisk together heavy cream, almond flour, granulated sugar, and almond extract until smooth. Pour into cooled tart shells.
  7. Bake for an additional 15 minutes until the filling is set. Allow to cool.
  8. Top each tartlet with fresh raspberries and a dollop of raspberry jam, then dust with powdered sugar before serving.

Notes

Tip: For a fruity twist, swap raspberries for mixed berries or use a berry compote as a topping.

When making the tartlet crust, ensure your butter is cold to achieve the perfect flaky texture. You can substitute almond extract with vanilla if desired, but almond adds a lovely depth to the flavor. If fresh raspberries are out of season, consider using frozen ones; just be sure to thaw and drain them well before topping your tartlets.

Store any leftover tartlets in an airtight container in the refrigerator for up to 3 days. For the best texture, enjoy them within the first day of making them.

  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 4 cups mixed greens (arugula, spinach, or field greens)

  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil and place them on a baking sheet.
  3. Roast the beets in the preheated oven for 40-45 minutes, or until they are tender when pierced with a fork.
  4. Once done, unwrap the beets, let them cool slightly, and then peel off the skins using your hands or a paper towel.
  5. Slice the roasted beets into wedges and set aside.

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, diced
  • 1 cup cooked chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled

  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them cut-side up in a baking dish.

These peppers can be made ahead of time and stored in the fridge, making them perfect for meal prep. Reheat in the oven until warmed through, or microwave them for a quick meal.
