Ingredients
INGREDIENTS
- 14 oz firm tofu, pressed and cubed
- 3 tbsp honey
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 tbsp sesame oil
- 1 tbsp sesame seeds, toasted
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together honey, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper to make the marinade.
- Add the pressed and cubed tofu to the marinade, toss well, and let it sit for at least 10 minutes.
- Spread the marinated tofu on one side of the prepared baking sheet and roast for 15 minutes.
- While the tofu is baking, toss the broccoli with sesame oil, salt, and pepper, and then add it to the baking sheet after the tofu has baked for 15 minutes.
- Continue to roast both the tofu and broccoli for an additional 15 minutes until the tofu is golden and the broccoli is tender-crisp.
- Remove from the oven, sprinkle with toasted sesame seeds and chopped green onions, and serve hot.
Notes
Use extra-firm tofu for the best texture and ensure it is well-pressed to remove excess moisture.
For the tofu, pressing it for at least 30 minutes will help achieve a firmer texture that absorbs the marinade better. If you’re looking for a different flavor profile, consider adding a splash of soy sauce or sriracha to the marinade for an extra kick.
Storage is straightforward: keep any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or on a skillet to maintain the tofu’s crispiness. You can also enjoy the baked tofu in salads or grain bowls for a meal prep option!
