Ingredients

INGREDIENTS

  • 2 ripe mangoes, peeled and diced
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh cilantro, roughly chopped
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/2 cup roasted peanuts, roughly chopped

FOR THE LIME VINAIGRETTE

  • 3 tablespoons fresh lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 tablespoon chili flakes (adjust to taste)
  • 1 garlic clove, minced

Instructions

  1. Prepare the lime vinaigrette by whisking together lime juice, fish sauce, honey, chili flakes, and minced garlic in a small bowl.
  2. In a large mixing bowl, combine the diced mangoes, shredded carrots, sliced red bell pepper, julienned cucumber, and thinly sliced red onion.
  3. Pour the lime vinaigrette over the salad mixture and toss gently to ensure everything is evenly coated.
  4. Add the chopped cilantro and mint, tossing once more to mix the herbs with the salad ingredients.
  5. Serve the salad in a large bowl or individual plates, garnished with chopped peanuts on top. Enjoy fresh!

Notes

Tip: For a vegetarian option, replace fish sauce with soy sauce or a vegan fish sauce alternative.

For the best flavor, use ripe, yet firm mangoes. If you can’t find fresh mangoes, consider using canned mango slices in natural juice, drained well. Adjust the spice level by adding more or less chili flakes according to your preference.

This salad can be made ahead of time; however, it’s best to add the peanuts just before serving to maintain their crunchiness. Store any leftovers in an airtight container in the refrigerator for up to a day.

Ingredients

INGREDIENTS

  • 1 large head of cauliflower, chopped
  • 1 bulb of garlic, roasted
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil, plus extra for herb oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley and thyme) for herb oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the top off the garlic bulb, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30-35 minutes until soft.
  3. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the chopped cauliflower and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the cauliflower is tender.
  5. Once the garlic is roasted, squeeze the cloves out of their skins into the pot. Add the heavy cream and blend the soup until smooth using an immersion blender or in batches using a countertop blender.
  6. Season with salt and pepper to taste.
  7. For the herb oil, blend fresh herbs with a drizzle of olive oil until smooth. Drizzle over the soup before serving.

Notes

Tip: To enhance the flavor, feel free to add a pinch of nutmeg or a squeeze of lemon juice before serving.

For an even richer flavor, try adding a splash of white wine while sautéing the onions. You can also experiment with different herbs in the oil—basil or parsley would work beautifully!

Storage: This soup can be stored in the refrigerator for up to 4 days. Simply reheat on the stove before serving. It also freezes well if you want to make a batch ahead of time.

Ingredients

INGREDIENTS

  • 5 cups chopped kale
  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1/2 cup sliced almonds
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced

FOR THE DRESSING

  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chopped kale, orange segments, grapefruit segments, sliced almonds, feta cheese, and red onion.
  2. In a separate bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Let the salad sit for about 10 minutes to allow the kale to soften slightly before serving.
  5. Serve chilled or at room temperature.

Notes

Tip: Feel free to swap out fruits based on the season, such as adding pomegranate seeds in the winter or strawberries in the summer.

For the best flavor, allow the salad to chill for about 20 minutes after dressing to let the flavors meld together. If you want to add some protein, grilled chicken or chickpeas work beautifully.

Store any leftovers in an airtight container in the refrigerator for up to two days, but be aware that the kale may wilt slightly. To keep it crisp, add the dressing just before serving.

Ingredients

INGREDIENTS

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon fresh sage, chopped (or 1/2 teaspoon dried)
  • Salt and pepper to taste
  • 1 cup pretzel bread, cubed
  • 2 tablespoons butter
  • 1/4 teaspoon garlic powder
  • Fresh sage leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the garlic and fresh sage; cook for another minute until fragrant.
  4. Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the squash is tender.
  5. While the soup simmers, prepare the pretzel croutons: Spread the cubed pretzel bread on a baking sheet. Melt butter and mix with garlic powder, then drizzle over the pretzel cubes. Toss to coat.
  6. Bake in the preheated oven for 10-12 minutes, or until golden and crispy.
  7. Once the squash is tender, use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until creamy.
  8. Season the soup with salt and pepper to taste. Serve hot, topped with pretzel croutons and garnished with fresh sage leaves.

Notes

For a vegan version, substitute butter with vegan margarine and ensure your vegetable broth is plant-based.

For the best flavor, roast your butternut squash until it’s caramelized; this will bring out its natural sweetness. If you’re short on time, you can use pre-cut butternut squash available in stores.

Feel free to experiment with different herbs such as thyme or rosemary if you’re not a fan of sage. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of vegetable broth if needed for a thinner consistency.

Ingredients

INGREDIENTS

  • 8 chicken drumsticks
  • 2 tablespoons olive oil
  • 1 tablespoon chipotle powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

FOR THE CILANTRO RANCH

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup buttermilk
  • 1/4 cup fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the olive oil, chipotle powder, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.
  3. Add the chicken drumsticks to the bowl and toss them until they are evenly coated with the marinade.
  4. Place the drumsticks on the prepared baking sheet, ensuring they are spaced out for even cooking.
  5. Bake in the preheated oven for 40-45 minutes, or until the chicken is crispy and cooked through, turning them halfway through the cooking time.
  6. While the chicken is baking, prepare the cilantro ranch dip by mixing the sour cream, mayonnaise, buttermilk, chopped cilantro, minced garlic, onion powder, salt, and pepper in a bowl until well combined.
  7. Once the chicken is done, remove it from the oven and let it rest for a few minutes before serving with the cilantro ranch dip.

Notes

Tip: For extra crispiness, broil the chicken for the last 2-3 minutes of cooking.

For the crispiest results, pat the chicken drumsticks dry with a paper towel before seasoning. You can also let them marinate for a couple of hours or overnight to enhance the flavors.

If you don’t have chipotle powder, you can substitute with a mix of smoked paprika and cayenne pepper for a similar smoky heat. For a milder version, reduce the amount of chipotle used.

Store any leftover drumsticks in an airtight container in the fridge for up to 3 days. Reheat them in the oven to maintain their crispiness. The cilantro ranch can also be stored for up to a week in the fridge!

Ingredients

INGREDIENTS

  • 1 lb large shrimp, peeled and deveined
  • 1 cup coconut milk
  • Juice and zest of 2 limes
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced

  2. Add the shrimp to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes.
  3. Meanwhile, rinse the quinoa under cold water. In a saucepan, combine quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed.
  4. Remove the quinoa from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Notes

Tip: For a more substantial meal, consider adding avocado slices or black beans to the quinoa salad.

For the best flavor, marinate the shrimp for at least 30 minutes, but no longer than 2 hours to avoid them becoming too soft. You can easily swap the shrimp for chicken or tofu if desired!

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet to maintain the texture of the shrimp. The quinoa salad can be served cold or at room temperature, making it great for meal prep!

Ingredients

INGREDIENTS

  • 1 large head of cauliflower
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 ripe avocado
  • 2 tablespoons lime juice
  • 2 tablespoons Greek yogurt (or dairy-free alternative)
  • Salt to taste

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Remove the leaves and stem from the cauliflower, then slice it into 1-inch thick steaks.
  3. In a small bowl, mix the BBQ sauce, olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Brush both sides of the cauliflower steaks with the BBQ mixture.
  5. Place the cauliflower steaks on the grill and cook for about 5-7 minutes on each side, or until tender and nicely charred.
  6. While the cauliflower is grilling, prepare the avocado cream by blending the avocado, lime juice, Greek yogurt, and salt until smooth and creamy.
  7. Once the cauliflower is done, remove from the grill and let it rest for a minute.
  8. Serve the smoky BBQ cauliflower steaks topped with the tangy avocado cream.

Notes

Tip: For an extra kick, add some cayenne pepper to the BBQ sauce or top the dish with fresh herbs like cilantro or parsley.

For the best results, choose a fresh, dense cauliflower head. When cutting the steaks, try to make them about 1-inch thick to prevent them from falling apart on the grill. If you prefer a milder flavor, you can reduce the amount of smoked paprika in the BBQ sauce.

Leftover cauliflower steaks can be stored in an airtight container in the fridge for 3-4 days. Reheat them in the oven to restore some crispiness. The tangy avocado cream can also be used as a dip for veggies or spread on sandwiches!

Ingredients

INGREDIENTS

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 3 carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 1 sweet potato, peeled and cut into chunks
  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar

Instructions

  1. In a bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, and pepper to create the marinade.
  2. Add the lamb chops to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill to medium-high heat. Remove lamb chops from marinade and let excess marinade drip off.
  4. In a separate bowl, toss the root vegetables with honey, balsamic vinegar, salt, and pepper.
  5. Place the root vegetables on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes until tender and caramelized.
  6. While the vegetables are roasting, grill the lamb chops for about 4-5 minutes per side, or until desired doneness is reached.
  7. Remove lamb chops from the grill and let them rest for a few minutes before serving alongside the roasted root vegetables. Enjoy!

Notes

For a smoky flavor, consider adding a few drops of liquid smoke to the marinade.

For the best flavor, marinate the lamb chops for at least 2 hours, or overnight if possible. This allows the herbs to penetrate the meat more deeply. If you don’t have fresh herbs, dried ones can work in a pinch, but use them sparingly.

Root vegetables can be swapped based on your preference; try sweet potatoes or parsnips for a twist. Leftover grilled lamb can be sliced thinly for sandwiches the next day, while roasted veggies can be stored in the fridge for up to 3 days.

  3. In a mixing bowl, combine the softened cream cheese, grated Parmesan, chopped chives, chopped parsley, garlic powder, salt, and pepper. Mix until well combined.
  4. Stuff each pepper half with the herbed cream cheese mixture until full.
  5. Dip each stuffed pepper into the breadcrumbs to coat the filling evenly.
