  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup diced bell peppers
  • 1/2 cup sliced green onions

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and black pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. In a separate bowl, mix together honey, soy sauce, ketchup, and sriracha to create the sauce.
  4. Place the meatballs in your slow cooker or Instant Pot, then pour the honey-garlic sauce over them, ensuring they're well coated.
  5. For the slow cooker: Cook on low for 4 hours or high for 2 hours. For the Instant Pot: Seal the lid and cook on high pressure for 10 minutes, then do a natural release for 5 minutes before manually releasing any remaining pressure.
  6. Once cooked, sprinkle shredded cheese and diced bell peppers on top, cover, and let it sit on warm for about 10 minutes until the cheese is melted.
  7. Garnish with sliced green onions before serving. Enjoy!

Notes

Tip: For a twist, try adding your favorite spices or herbs to the meatballs for extra flavor.

For extra heat, add diced jalapeƱos or a dash of red pepper flakes to the meatball mixture. If you want a healthier twist, substitute ground turkey for beef, or use plant-based meatballs for a vegetarian version.

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or in a pot on low heat, adding a splash of water if needed to prevent drying out.

  • 2 tablespoons olive oil
  • 2 teaspoons lemon zest
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 6-8 taco-sized tortillas
  • Toppings: chopped cilantro, diced avocado, lime wedges, salsa

Instructions

  1. Rub the turkey breast with olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, black pepper, and salt.
  2. Place the seasoned turkey in the slow cooker or Instant Pot.
  3. For slow cooking: Cover and cook on low for 6-8 hours or high for 3-4 hours until the turkey is tender and easily shredded.
  4. For Instant Pot: Seal the lid and cook on high pressure for 30 minutes. Allow natural release for 10 minutes before quick releasing any remaining pressure.
  5. Once cooked, shred the turkey using two forks and mix it with the juices in the cooker.
  6. Warm the tortillas in a dry skillet or microwave until pliable.
  7. Assemble the tacos by placing the pulled turkey in tortillas and adding your favorite toppings.
  8. Serve immediately with lime wedges on the side.

Notes

Note: If preferred, you can substitute the turkey breast with chicken breasts for a different flavor. You can also adjust the herbs to suit your taste.

For the best flavor, allow the turkey to marinate in the herb and lemon mixture for a few hours before cooking. If you’re short on time, you can skip this step but marinating is recommended. For a spicy kick, add chopped jalapeƱos or a dash of hot sauce to the cooking mixture.
