Whether you’re an experienced baker or just starting, this recipe will impress everyone at your table.

Ingredients

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

FOR THE COCONUT-ALMOND FILLING

  • 1 cup shredded coconut
  • ½ cup sliced almonds
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk

FOR THE CHOCOLATE GANACHE

  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until the batter is smooth. Divide evenly between the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  6. While the cakes cool, prepare the coconut-almond filling by combining shredded coconut, sliced almonds, powdered sugar, vanilla, and milk in a bowl until well mixed.
  7. For the ganache, heat the heavy cream in a saucepan until just about to boil. Pour over the chopped chocolate in a bowl and let sit for 5 minutes. Stir until smooth and glossy.
  8. Once the cakes are cool, place one layer on a serving plate and spread the coconut-almond filling evenly on top. Place the second layer over the filling.
  9. Pour the chocolate ganache over the cake, allowing it to drip down the sides. Decorate with extra almonds or coconut if desired.

Notes

Tip: For more richness, add a layer of chocolate frosting between the cake and the filling.

To ensure your cake layers are perfectly even, use a kitchen scale to measure your batter. If you’re short on time, a store-bought chocolate ganache can work well; just heat it gently before pouring over the cake.

Consider adding a sprinkle of toasted coconut on top for extra texture and flavor. This cake can be stored in the fridge for up to five days; just make sure it’s covered well to maintain moisture.

This Coconut Curry Carrot and Ginger Soup is a delightful blend of sweet carrots and zesty ginger, simmered in creamy coconut milk and fragrant curry spices. It’s the perfect bowl of comfort that not only warms you up but also offers a burst of flavor in every sip.

The secret to this soup’s depth lies in the use of fresh ginger and a quality curry powder, which together create a harmonious balance that tantalizes the taste buds. Garnished with bright cilantro, this dish not only looks appealing but also adds a refreshing contrast to the rich, creamy soup.

Ingredients

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups carrots, peeled and chopped
  • 2 teaspoons curry powder
  • 1 can (14 oz) coconut milk
  • 3 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add chopped carrots and curry powder, stirring to coat the carrots in the spices.
  5. Pour in the coconut milk and vegetable broth, bringing the mixture to a simmer.
  6. Cover and cook for 20 minutes, or until the carrots are tender.
  7. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  8. Season with salt and pepper to taste, then serve hot, garnished with fresh cilantro.

Notes

Tip: For an extra kick, add a pinch of red pepper flakes while cooking for some heat.

For a creamier texture, blend the soup until completely smooth, and if you prefer a bit of texture, leave some carrot pieces unblended. You can easily substitute coconut milk with almond milk or any other plant-based milk for a lighter variation.

Store leftovers in an airtight container in the fridge for up to three days. Reheat gently on the stove, adding a splash of vegetable broth if the soup thickens too much. This soup also freezes well for up to a month, making it a great meal prep option!

Ingredients

INGREDIENTS

  • 4 cups mixed salad greens
  • 2 medium apples, thinly sliced (preferably a mix of sweet and tart)
  • 1 cup walnuts, toasted and coarsely chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup dried cranberries (optional)

FOR THE MAPLE-DIJON DRESSING

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined. Set aside.
  2. In a large salad bowl, combine the mixed salad greens, sliced apples, and toasted walnuts.
  3. If using, sprinkle the crumbled feta cheese and dried cranberries over the salad.
  4. Drizzle the prepared dressing over the salad just before serving and toss gently to coat.

Notes

Storage Tip: Store the salad components separately in an airtight container in the refrigerator and combine just before serving to keep everything fresh and crisp.

For added flavor, consider toasting the walnuts lightly in a dry skillet until golden brown—this enhances their nutty flavor. If you’re looking for a vegan option, substitute honey in the dressing with maple syrup.

For best results, serve this salad immediately after dressing to maintain the crispness of the greens. If you need to prepare it ahead of time, keep the dressing separate until just before serving.

  3. Add cumin, chili powder, and cayenne pepper, stirring well to coat the vegetables in the spices.

Ingredients

INGREDIENTS

  • 2 lbs lamb shoulder, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 2 cups diced tomatoes (canned or fresh)
  • 1 cup chicken broth
  • 1/2 cup dried apricots, chopped
  • 1 can chickpeas, drained and rinsed
  • Salt and pepper to taste
  • 1 cup couscous
  • 1/2 cup apricot preserves
  • 1/4 cup slivered almonds, toasted for garnish
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large tagine or Dutch oven over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic, cumin, cinnamon, coriander, paprika, and cayenne; cook for an additional minute.
  4. Add lamb pieces, browning on all sides, about 8-10 minutes.
  5. Pour in diced tomatoes and chicken broth; bring to a simmer.
  6. Stir in chopped apricots and chickpeas, season with salt and pepper.
  7. Cover and reduce heat to low; simmer for 1.5 hours or until lamb is tender, stirring occasionally.
  8. Meanwhile, prepare the apricot couscous according to package instructions, mixing in apricot preserves for sweetness.
  9. Fluff couscous with a fork and serve alongside the lamb tagine.
  10. Garnish with toasted almonds and fresh cilantro or parsley before serving.

Notes

Tip: Adjust the level of heat by varying the cayenne pepper to suit your taste. For a milder version, reduce or omit it completely.

For the best flavor, use a cut of lamb that has some fat, such as shoulder or shank, as it will become incredibly tender during cooking. If you’re short on time, a pressure cooker can speed up the tagine process significantly.

When preparing your couscous, feel free to mix in extra dried fruits like raisins or nuts for added texture and sweetness. Leftovers can be stored in an airtight container in the fridge for up to 3 days; simply reheat before serving.
