  • 2 cups vegetable broth
  • 1 lb Brussels sprouts, trimmed and halved
  • 1/4 cup maple syrup
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat, cover, and simmer for about 15 minutes or until liquid is absorbed.
  3. While the quinoa cooks, prepare the Brussels sprouts. In a large bowl, combine halved Brussels sprouts, olive oil, garlic powder, onion powder, salt, and black pepper. Toss until well coated.
  4. Spread the Brussels sprouts in a single layer on a baking sheet and roast for 20 minutes, or until tender and golden.
