Ingredients

INGREDIENTS

  • 4 bone-in pork chops
  • 1 ripe mango, pureed
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 cups cooked rice
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, zested and juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together the mango puree, honey, soy sauce, and lime juice to create the glaze.
  3. Season the pork chops with salt and pepper, then brush half of the mango glaze over the chops.
  4. Grill the pork chops for about 6-7 minutes on each side, brushing with the remaining glaze during the last few minutes of cooking until they reach an internal temperature of 145°F (63°C).
  5. While the pork is grilling, prepare the cilantro-lime rice by mixing the cooked rice with lime zest, lime juice, and chopped cilantro in a bowl. Season with salt to taste.
  6. Once the pork chops are done, remove them from the grill and let them rest for a few minutes before serving.
  7. Serve the grilled pork chops alongside the cilantro-lime rice, garnished with additional cilantro if desired.

Notes

Tip: For an extra touch, consider adding a side of grilled vegetables or a fresh salad to complement your meal.

To ensure your pork chops remain juicy, avoid overcooking them; a meat thermometer should read 145°F (63°C) at the thickest part.

If you’re short on time, you can marinate the pork in the mango glaze for a few hours beforehand for even more flavor. Feel free to substitute the pork chops with chicken thighs or tofu for a different twist.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave. The cilantro-lime rice also makes a delicious side for other dishes!

Ingredients

INGREDIENTS

  • 4 bone-in chicken thighs
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 lemon (zest and juice)
  • 1 orange (zest and juice)
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, oregano, thyme, lemon zest, and orange zest. Season with salt and pepper.
  3. Rub the herb mixture over the chicken thighs, ensuring they are well-coated.
  4. Place the chicken on a baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  5. While the chicken is baking, rinse the quinoa under cold water.
  6. In a saucepan, combine the quinoa and chicken broth, then bring to a boil.
  7. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed.
  8. Remove from heat and fluff the quinoa with a fork, then mix in the lemon juice and orange juice.
  9. Serve the herb-crusted chicken thighs over the citrus quinoa pilaf, garnished with chopped parsley.

Notes

Tip: For added flavor, marinate the chicken in the herb mixture for a few hours or overnight.

For the chicken, ensure that the thighs are patted dry before coating with herbs to achieve maximum crispiness. If you want to substitute quinoa, brown rice or couscous also work well with the citrus flavor.

Leftover chicken can be stored in the fridge for up to three days and reheated in the oven for the best texture. The quinoa pilaf can be made ahead and served cold as a salad if desired.

Ingredients

INGREDIENTS

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon fresh dill, chopped
  • 1/4 cup vegetable oil (for frying)
  • For the Dill Yogurt Dip:
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let them sit for about 10 minutes, then squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, onion powder, and fresh dill. Mix until well combined.
  3. Heat the vegetable oil in a large skillet over medium heat.
  4. Scoop tablespoon-sized portions of the zucchini mixture into the hot oil, flattening them slightly with the back of a spatula. Fry until golden brown, about 3-4 minutes per side.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  6. For the dill yogurt dip, mix together the Greek yogurt, fresh dill, lemon juice, and season with salt and pepper to taste. Serve alongside the fritters.

Notes

Tip: Squeeze out excess moisture from the zucchini for crispier fritters.

For extra crunch, ensure to squeeze out as much moisture from the grated zucchini as possible before mixing it into the batter. This prevents the fritters from becoming soggy.

If you’re looking for a gluten-free option, substitute regular flour with almond flour or a gluten-free all-purpose blend. Feel free to add other herbs or spices to the mix for added flavor!

These fritters are best served immediately but can be stored in an airtight container in the refrigerator for up to 2 days. Reheat them in an oven to maintain their crispiness.

Ingredients

INGREDIENTS

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cold water
  • 1/2 teaspoon salt
  • 1 cup basil pesto
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a mixing bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  4. On a floured surface, roll out the dough to about 1/8 inch thick. Cut out rounds using a cookie cutter or glass (about 3 inches in diameter).
  5. In a bowl, mix together the basil pesto, ricotta, and Parmesan until well combined.
  6. Place a teaspoon of the filling in the center of each round. Fold over and seal the edges with a fork or by pinching them closed.

Notes

Tip: For a richer flavor, add minced garlic or chopped sun-dried tomatoes to the pesto filling.

For a crispy exterior, make sure to brush the empanadas with egg wash before baking. You can also experiment with different fillings—try adding cooked spinach or sun-dried tomatoes for extra flavor. These empanadas can be made ahead of time and frozen; just bake them straight from the freezer, adding a few extra minutes to the cooking time.

To serve, pair them with a fresh salad or a zesty dipping sauce for a fun appetizer or snack!

Ingredients

INGREDIENTS

  • 1 medium head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine cauliflower florets with olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using).
  3. Toss until the florets are evenly coated with the mixture.
  4. Spread the coated cauliflower in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
  6. Remove from the oven and sprinkle with grated Parmesan cheese, tossing to combine. Return to the oven for an additional 5 minutes to melt the cheese.
  7. Serve warm as a snack or appetizer.

Notes

Note: For added flavor, consider drizzling with lemon juice or serving with a dipping sauce like ranch or tzatziki.

For the best crunch, ensure the cauliflower florets are evenly sized to cook uniformly. If you’re looking for a vegan option, substitute the Parmesan with nutritional yeast for a cheesy flavor without the dairy.

Store any leftovers in an airtight container for up to two days. Reheat in the oven to regain crispiness—microwaving may make them soggy.

written by Linda

Start your morning right with this hearty Quinoa and Spinach Breakfast Bowl. Packed with protein-rich quinoa and fresh spinach, this bowl is a powerhouse of nutrients that will keep you energized throughout the day. The star of the dish is the poached egg, which adds a creamy richness and extra protein to the mix.

This breakfast bowl is customizable, so you can add your favorite toppings like avocado, cherry tomatoes, or a sprinkle of feta cheese. It’s not just healthy; it’s also incredibly satisfying, making it the perfect choice for any breakfast lover looking for something both nutritious and delicious.

Ingredients

INGREDIENTS

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 2 cups fresh spinach
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional toppings: avocado, cherry tomatoes, feta cheese, red pepper flakes

Instructions

  1. In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  2. While the quinoa cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted, about 2-3 minutes. Season with salt and pepper to taste.
  4. In a separate pot, bring water to a gentle simmer. Crack each egg into a small cup and carefully slide it into the simmering water. Cook for about 3-4 minutes for a soft poached egg. Remove with a slotted spoon and drain on paper towels.
  5. To assemble the breakfast bowl, divide the quinoa between two bowls, top with the sautéed spinach, and place a poached egg on each bowl. Add any optional toppings as desired.

Notes

For a vegan version: Skip the egg and top with sliced avocado or a scoop of hummus instead.

For the best poached egg, use the freshest eggs you can find, as they hold their shape better when cooked. If you prefer, you can also make this bowl vegetarian by omitting the egg or replacing it with a dollop of Greek yogurt.

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat the quinoa in the microwave and quickly reheat the spinach in a skillet for a quick breakfast the next day!

Ingredients

INGREDIENTS

  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Butter or oil for cooking

FOR THE BERRY COMPOTE

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. In a large mixing bowl, combine the ricotta cheese, eggs, milk, sugar, lemon zest, and lemon juice. Mix well until smooth.
  2. In another bowl, whisk together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  4. Heat a skillet over medium heat and add a small amount of butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter, adding more butter or oil as needed.

Notes

Tip: These pancakes are best served immediately, but you can keep them warm in a low oven (around 200°F) while cooking the rest.

For best results, use fresh ricotta and fresh lemons to enhance the flavors. If you prefer a thicker pancake, let the batter rest for about 10 minutes before cooking.

Feel free to substitute the berry compote with your favorite fruits, such as peaches or cherries, depending on the season. Leftover pancakes can be stored in an airtight container in the refrigerator for up to three days. Reheat them in a toaster or microwave for a quick breakfast fix.
