Ingredients

INGREDIENTS

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1 tbsp sriracha
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup diced bell peppers
  • 1/2 cup sliced green onions

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and black pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. In a separate bowl, mix together honey, soy sauce, ketchup, and sriracha to create the sauce.
  4. Place the meatballs in your slow cooker or Instant Pot, then pour the honey-garlic sauce over them, ensuring they're well coated.
  5. For the slow cooker: Cook on low for 4 hours or high for 2 hours. For the Instant Pot: Seal the lid and cook on high pressure for 10 minutes, then do a natural release for 5 minutes before manually releasing any remaining pressure.
  6. Once cooked, sprinkle shredded cheese and diced bell peppers on top, cover, and let it sit on warm for about 10 minutes until the cheese is melted.
  7. Garnish with sliced green onions before serving. Enjoy!

Notes

Tip: For a twist, try adding your favorite spices or herbs to the meatballs for extra flavor.

For extra heat, add diced jalapeños or a dash of red pepper flakes to the meatball mixture. If you want a healthier twist, substitute ground turkey for beef, or use plant-based meatballs for a vegetarian version.

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or in a pot on low heat, adding a splash of water if needed to prevent drying out.

Ingredients

INGREDIENTS

  • 2 lbs turkey breast
  • 2 tablespoons olive oil
  • 2 teaspoons lemon zest
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 6-8 taco-sized tortillas
  • Toppings: chopped cilantro, diced avocado, lime wedges, salsa

Instructions

  1. Rub the turkey breast with olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, black pepper, and salt.
  2. Place the seasoned turkey in the slow cooker or Instant Pot.
  3. For slow cooking: Cover and cook on low for 6-8 hours or high for 3-4 hours until the turkey is tender and easily shredded.
  4. For Instant Pot: Seal the lid and cook on high pressure for 30 minutes. Allow natural release for 10 minutes before quick releasing any remaining pressure.
  5. Once cooked, shred the turkey using two forks and mix it with the juices in the cooker.
  6. Warm the tortillas in a dry skillet or microwave until pliable.
  7. Assemble the tacos by placing the pulled turkey in tortillas and adding your favorite toppings.
  8. Serve immediately with lime wedges on the side.

Notes

Note: If preferred, you can substitute the turkey breast with chicken breasts for a different flavor. You can also adjust the herbs to suit your taste.

For the best flavor, allow the turkey to marinate in the herb and lemon mixture for a few hours before cooking. If you’re short on time, you can skip this step but marinating is recommended. For a spicy kick, add chopped jalapeños or a dash of hot sauce to the cooking mixture.

Leftover pulled turkey can be stored in an airtight container in the fridge for up to three days. Reheat it gently on the stove or in the microwave. These tacos are also versatile; feel free to substitute corn tortillas for a gluten-free option!

Ingredients

INGREDIENTS

  • 12 oz pasta of choice
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 4 cups fresh spinach, roughly chopped
  • 1 cup cream or half-and-half
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the chopped artichoke hearts and fresh spinach, cooking until the spinach wilts, about 2-3 minutes.
  4. Pour in the cream and bring to a gentle simmer. Stir in the Parmesan and mozzarella cheese until melted and combined.
  5. Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add a splash of pasta water to loosen it up.
  6. Season with lemon juice, salt, pepper, and red pepper flakes if using. Toss again to combine and heat through.
  7. Serve immediately, garnishing with additional cheese and fresh herbs if desired.

Notes

Note: For a vegetarian option, ensure the pasta is made without eggs. This dish is best enjoyed fresh, but leftovers can be reheated easily.

Be sure to use fresh spinach for the best flavor, but frozen spinach can also work—just make sure to thaw and drain it well. If you’re looking for a lighter version, consider swapping out half of the cream with vegetable broth.

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat gently on the stove or in the microwave, adding a splash of water or broth to loosen the sauce if necessary.

Ingredients

INGREDIENTS

  • 1 cup Arborio rice
  • 2 cups pumpkin puree
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups gluten-free vegetable broth
  • 1/2 cup white wine (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons fresh sage, chopped
  • 1/4 cup toasted pine nuts
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable broth in a saucepan and keep it warm over low heat.
  2. In a large pan, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  3. Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
  4. Pour in the white wine (if using) and stir until absorbed.
  5. Begin adding the warm vegetable broth one ladle at a time, stirring frequently, allowing each addition to be absorbed before adding the next.
  6. After about 15 minutes, add the pumpkin puree and chopped sage to the risotto. Continue adding broth and stirring until the rice is creamy and al dente, about 5-10 more minutes.
  7. Stir in the heavy cream and grated Parmesan cheese, and season with salt and pepper to taste.
  8. Serve hot, garnished with toasted pine nuts and additional sage if desired.

Notes

Note: Ensure all ingredients used are certified gluten-free to maintain the dish's gluten-free status.

For best results, use fresh pumpkin puree instead of canned for a deeper flavor. If you want to make this dish vegan, substitute the butter with olive oil and use a plant-based cream. Be careful not to overcook the rice; it should be creamy yet al dente.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of vegetable broth to bring back its creamy consistency.

  • Salt and pepper to taste

  2. Place whole bell peppers on a baking sheet and roast for 20 minutes until the skin is charred and blistered.
